Chicory is a perennial plant commonly found in the U.S. and Europe. It is also found in the Near East, and North and South Africa. The roots are light yellow on the outside and are white on the inside. The inside of the Chicory contains a bitter, milky juice. The plant has light-blue to violet-blue flowers. The Chicory flowers between July and October. It grows to an average height of 2 m. Chicory has been blended with coffee when dried, roasted, and ground, as Chicory adds a pleasantly bitter taste and reduces stimulating effects. Parts usually used: Root, leaves

Potential Uses:
- As a tonic and to settle the stomach
- As a laxative
- As a diuretic
- For jaundice
- For disorders of the kidneys, liver, stomach and spleen
